Everyone has their comfort food classics, those dishes that satisfy a hungering soul. Since moving to Mexico, we’ve developed a fondness for chicken tinga – poached chicken in a rich sauce of chipotle chiles, chorizo and spices.
An incredibly versatile dish, we never run out of ways to serve it, whether traditionally on top of tostadas, as a filling for flautas or even grilled in a sandwich with melted cheese (a guilty pleasure when nobody is watching).
