Hi Antonio. Glad to hear you enjoyed the results and that you're experimenting using different types of fish. We don't have access to fresh tuna in Yucatan, so it will be a while before we can give this a go.

Tried the recipe. Delicious result. Too easy to be true. I used sea bass once and other time tune sashime. Both times the result was over the top. Thanks.

[...] The days are warming up and our thoughts start turning to the beach. Itching to hit the coast, we headed to Progreso to find some fresh fish for Pescado a la Talla -a whole fish, butterflied and basted with chilies before being grilled over open flame. Washed down with a few beers, it was a fantastic afternoon lunch. Check out our video, or try your hand at the recipe. [...]

[...] Yesterday, we were in the mood for a little ceviche for lunch, so we created one with a bit of Thai flair. Working from a recipe we created for the last remixto private dinner, we added lemongrass to the mix and replaced grapefruit with sliced mango, as mangoes are in season right now in Mérida. Check out the video of the dish below, and take the recipe for a spin. [...]

Hi,

You don´t know me but I´m a follower of your blog and have been looking forward to meeting you at one of your famous brunches as soon as the opportunity arose.

My wife and I are Brits living in a hacienda just outside of Uman (to the south of Merida), and should you ever find yourself "homeless" again please consider using our home as a venue. Although it is not a hotel, we have an industrial kitchen, cold room and all of the requisite equipment for holding such an event, and the out-of-town location might make an attractive alternative for your clientele.

With best wishes, Richard Nichols
